Suspiro de Limeña This traditional dessert from Lima is sweet poetry, its name coming from the Peruvian poet José Gálvez Barrenechea. When his wife Amparo Ayarez, credited with creating the recipe, presented him with the dessert made from milk cream and port wine meringues, he described it with a romantic verse: "a gentle and sweet sigh of a woman". We share with you a little bit of history about ou We share with you a little bit of history about our new Arroz Chaufa 🍚 Arroz chaufa is undoubtedly one of the most popular dishes in Peru. Not only is it consumed in restaurants and households throughout the country, but it is also adapted to various regional circumstances, resulting in a wide variety of original versions. We serve our arroz chaufa with egg and pork, accompanied by sweet and sour pickled radish and a spicy crema de rocoto. The history of this dish traces back to the Chinese immigrants, known as 'culíes', at the end of the 19th century, who worked as laborers on the coastal haciendas. Their wages consisted of a daily ration of rice with spices. With additional ingredients like soy sauce and ginger, they prepared the rice in a wok. The name Arroz chaufa originates from the Cantonese word chaofan, which means 'fried rice'. Pulpo al Olivo The finely sliced octopus in olive cream is a creation by Rosita Yimura from the 1980s and is part of the Japanese-Peruvian fusion cuisine known as "Nikkei". This cold starter explores the tension between the sweetness and aroma of the octopus, contrasted with the subtle bitterness and olive flavor of the sauce. The texture of the octopus is perfectly complemented by the creamy consistency of the sauce made from homemade mayonnaise and black olives.
